Tortas EL Tommy is a food truck and catering venture in Oslo, bringing the vibrant flavors of real Mexican street food to Norway.

All tortas calientes are served on homemade telera bread, piled with tomato, onion, avocado, and melted Oaxaca cheese — then elevated with their own fresh salsas.They also make their own salsas — from piquín and chipotle to pickled jalapeños, habanero onions, and more — to complete the experience.

Behind Tortas EL Tommy is Tommy, “el tortero,” whose passion for sharing Mexico’s flavor and spirit inspired the project.

Whether you’re grabbing lunch or planning an event, they aim to bring a slice of Mexico to your plate — one torta at a time.

We’re beyond excited to announce that Eden, the creator of Edens Kaker, will be joining us at Xibalba 2025!

To speak of Edens Kaker is to speak of Eden — an artist of flavor, a master of detail, and a dreamer who turns baking into pure art. From her workshop in Oslo, Eden has captured hearts with her stunning creations — custom cakes, exquisite desserts, and touches of Mexican bakery magic that bring warmth and nostalgia to every bite.

Her passion, care, and love for her craft shine through in everything she makes. That’s why having her with us once again at Xibalba 2025 is such an honor and a joy.

Tacos La Regia was born from the heart of a regia who found herself far from her mountains but still craving the flavors of home.

Inspired by the traditional kitchens of northern Mexico, we bring you tacos made with love, warmth, and a true taste of Monterrey. From our Tacos de Barbacoa, slow-cooked and tender just like Sunday mornings back home, to our Tacos al Vapor, soft, steamy, and full of comforting flavor — every bite carries a story, a memory, and a little piece of Mexico.
